We lightly roasted this coffee which is sourced from the Kochere District located in the southern region of Ethiopia. This coffee has clean acidity enjoyable floral notes and hints of Red Apple.
The independent growers and small farm holders in this area take great pride in hand-picking the best cherries and selecting the ripest cherries for processing. Indigenous people to this area call this coffee “White Flower” which is a presumptive nod to the fragrant budding white flowers of arabica coffee plants. Something unique about this coffee is that it has a local Ethiopian varietal referred to as “Kumie Diga Wilsho”. This coffee is washed which means it is pulped, fermented, washed and then laid out on drying beds to stabilize the moisture content. Elevation for this coffee ranges from 5,500 feet to 6,000 feet.
